No More Cooking, Please!

Wow! I have just spent 2 full days in the kitchen. I was inspired to try my hand at freezer cooking. This is when you spend a day in the kitchen cooking and prepping your meals for the next month! It takes a LOT of planning. And I think I either got carried away or over-ambitious because I planned tons of stuff. I think I'll say it was the ambitious option!

And don't worry- you aren't having to eat casseroles everyday either. I didn't make one casserole! Here's what is on our menu for the next few weeks:
  • chili
  • chicken stir fry
  • cannelloni
  • pintos and cornbread
  • taco soup
  • chicken burritos (I waned to eat these as I made them!)
  • pork BBQ
  • Minnestrone
  • garlic bread
  • dijon chicken
I can't remember if that's everything- but I'm too tired to get up and get my list! So here are the pro's to this experiment: Much less time preparing daily dinners, menu planning is done for the next few weeks, we won't run out of food by Sunday, more economical, packed more veggies in different dishes. Cons: actually took 2 days, had to neglect true for a day, a little stressful planning it out

Overall it was enjoyable because I knew I'd be in the kitchen all day so i just enjoyed it. And I have tons of meals ready to go for the next month! I did get sidetracked a couple times including when I decided to make roasted garlic. This is so yummy! And now I have a little jar of it ready to go in my fridge! Mmmmm! I also used dried kidney, black, and pinto beans for my recipes and I probably wouldn't next time because they made it all a bit more labor intensive.
